Turkey roulades

Ingredients for 6 servings:

  • 6 turkey schnitzels, very thinly sliced
  • 50 g pine nuts
  • 6 slices of ham (Serrano ham)
  • 200 ml chicken broth
  • 50 ml white wine, dry
  • 100 ml cream
  • ½ bunch sage
  • ½ bunch tarragon
  • salt and pepper
  • oil

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Pat the turkey schnitzels dry and season with pepper. Grind the pine nuts, sage, and tarragon together in a blender and spread the paste over the schnitzels. Then place a slice of Serrano ham on each schnitzel, roll the schnitzels into roulades as tightly as possible, and secure them. Brown them all over in hot oil and deglaze with stock and wine. Cover and simmer for 20 minutes. Then remove the roulades and keep warm. Reduce the sauce slightly, add the cream, and season with salt and pepper. Serve the roulades in the sauce. Enjoy with spaetzle and a green salad.
