Turkey schnitzel alla pizzaiola

Ingredients for 2 servings:

  • 2 turkey schnitzels (150 g each)
  • 1 onion(s)
  • 1 clove(s) garlic
  • 1 stalk(s) Celery
  • 1 tomato(s)
  • 8 black olives, pitted
  • 2 tsp capers
  • 1 anchovy fillet(s)
  • 1 can tomato(s), chunky, 200 g
  • 2 tbsp olive oil
  • 100 g cheese, grated
  • oregano
  • salt and pepper
  • Sugar
  • chili flakes
  • oil

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 50 minutes

Finely chop the onion and garlic and sauté in olive oil. Remove the tough strings from the celery and cut into thin strips. Dice the tomato and slice the olives into rings. Finely chop the anchovy fillet. Add everything to the onions along with the canned tomatoes and capers, and simmer for a while. Season with spices and a pinch of sugar. Brown the turkey schnitzel in oil and place in a baking dish. Pour the sauce over it and sprinkle with cheese. Bake at 170°C fan-assisted oven for about 20 minutes. Serve with pasta, rice, or simply with baguette.
