Turkey schnitzel filled with Parma ham and Gorgonzola

Ingredients for 4 servings:

  • 4 turkey cutlets, thin
  • 2 tbsp soy sauce
  • 2 tbsp yogurt (full milk yogurt)
  • 50 g Gorgonzola with mascarpone
  • 50 g Parmesan, finely grated
  • 50 g breadcrumbs
  • 1 egg(s)
  • some flour
  • Oil or clarified butter
  • 4 slices of Parma ham

Instructions

Working time approx. 45 minutes; Total time approx. 45 minutes

Spread the turkey cutlets out and flatten them slightly with a wide knife. Drizzle with soy sauce and spread with yogurt. Top each with a slice of Parma ham, stir in the Gorgonzola until smooth, and spread it on top. Fold the cutlets together and press down firmly. Mix the breadcrumbs and Parmesan cheese. Lightly flour the cutlets, dip them in the beaten egg, and then bread them. Fry the cutlets in oil or clarified butter for about 4-5 minutes on each side. Serve with a risotto with a little rocket and carrots tossed in a little balsamic vinegar.
