Ingredients for 1 servings:
- 1 m.-sized turkey schnitzel
- 1 red bell pepper(s)
- 8 cocktail tomatoes
- 4 Pepper, green
- 50 g sheep’s cheese (or light)
- 1 tsp pesto, green
- 1 tbsp olive oil, good
- salt and pepper

Preheat oven to 200°C. Season the turkey schnitzel with salt and pepper and place it in a small baking dish. Deseed the bell peppers and slice them into strips. Halve the tomatoes. Remove the stems from the peppers. Dice the feta cheese. Spread the prepared vegetables and cheese over the schnitzel. Drizzle with pesto and olive oil. Sprinkle the vegetables with salt and pepper and garnish with Mediterranean herbs, if desired. Bake for 25 minutes. You can also vary the dish with capers, onions, olives, and zucchini.
