Turkey schnitzel with pesto filling

Ingredients for 4 servings:

  • 500 g tagliatelle pasta
  • 4 turkey schnitzels
  • salt and pepper
  • 4 tbsp pesto
  • olive oil
  • possibly Parmesan, freshly sliced

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Cook the pasta in plenty of salted water, drain well, and let it wilt. Meanwhile, season the schnitzel with salt and pepper. Spread with pesto, roll up, and secure with wooden skewers. Heat plenty of olive oil in a pan and fry the turkey rolls on all sides. Remove the wooden skewers from the meat, slice the rolls, and arrange on plates. Briefly heat the pasta in the frying fat in the pan and arrange on the plates. Sprinkle with some shaved Parmesan cheese, if desired.
