Ingredients for 2 servings:
- 300 g turkey breast fillet(s)
- 1 small zucchini
- 1 onion(s)
- 2 cloves garlic
- 2 tbsp olive oil
- 1 class can/n tomatoes, chunky (approx. 450 ml)
- 2 tbsp balsamic vinegar
- n. B. Salt
- n. B. Pepper, from the mill
- 2 tbsp fresh basil (chopped)
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes
Cut the turkey breast into finger-thick strips. Dice the zucchini. Peel and chop the onion and garlic. Heat oil in a pan and brown the turkey strips on all sides, then remove and keep warm. Brown the zucchini, onion, and garlic in the remaining fat from the pan. Add the tomatoes and simmer until a creamy sauce forms. Season with balsamic vinegar, salt, and pepper. Return the meat to the pan with the sauce and heat through (do not boil!). When serving, garnish the strips with basil. Serve with rice or pasta.
