Turkey strips with asparagus

Ingredients for 2 servings:

  • 300 g turkey meat, shredded
  • 1 small onion(s), finely diced
  • 300 g asparagus, white or green, cleaned and cut into pieces
  • 1 tbsp clarified butter
  • Salt
  • pepper
  • 1 tbsp tarragon, shredded
  • 1 tsp chervil, finely chopped
  • ½ tsp curry
  • 100 ml dry white wine
  • 1 cup meat broth
  • 1 dash of cream or Cremefine
  • Cornstarch, mixed with a little water
  • possibly Maggi or Worcestershire sauce

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 40 minutes

Brown the turkey strips in hot frying fat and remove from the pan. Sauté the onion in the pan juices, season with spices, and deglaze with white wine. Add the stock and simmer the asparagus pieces until almost tender. Thicken and stir in the cream, and bring to a boil. Add the meat again and heat through. Season to taste with Maggi or Worcestershire sauce, if desired.
