Turkish pancakes with minced meat

Ingredients for 4 servings:

  • 250 g minced beef
  • 1 garlic clove(s)
  • 1 tbsp olive oil
  • some salt and pepper
  • 75 g olives, pitted, green
  • 800 g tomatoes, peeled, from the can
  • 4 tbsp ajvar
  • 200 g sheep’s cheese
  • 1 point pancakes from the refrigerated section

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes

Preheat the oven to 175 degrees Celsius. Heat olive oil in a pan and brown the minced meat until crumbly. Peel and press the garlic, then season with salt and pepper. Place the canned tomatoes, including their juice, in a large ovenproof dish or in serving dishes. Mix in the olives and season with salt and pepper. Brush each pancake with 1 tablespoon of ajvar and top with some of the minced meat. Roll up or fold the pancakes as desired and place them on top of the tomatoes. Crumble the feta cheese and sprinkle over the pancakes and tomatoes. Bake in the preheated oven (center) for about 30 minutes.
