Ingredients for 4 servings:

  • 450 g flour
  • Salt
  • 21 g yeast
  • 4 spring onions, diced
  • 300 g tomatoes
  • 2 peppers, green, cut into strips
  • 1 bunch parsley, flat, chopped
  • 300 minced lamb, minced twice
  • 2 tsp chili flakes, Turkish (Pul biber)
  • pepper
  • ¼ tsp ground cumin
  • 2 tbsp olive oil
  • Oil, for the sheet
  • 2 onions, red, chopped
  • 1 tsp sumac

Working time approx. 35 minutes; Total time approx. 35 minutes

Lahmacun

Sift flour and salt into a bowl. Dissolve the yeast in 250 ml lukewarm water, make a well in the flour, pour in the yeast water and mix with a little flour to form a pre-dough. Cover and let rise in a warm place for about 15 minutes. Then mix everything together and knead with your hands for about 10 minutes, then form 8 balls and let them rise, covered, for about 30 minutes. Pour boiling water over the tomatoes, let stand briefly, then peel, remove the stems and chop the flesh. Mix the vegetables, spices and herbs well with the minced meat. Grease a baking tray. Roll out the dough balls on a floured surface into plate-sized disks and spread 1/8 of the minced meat mixture on each. Place 2 pizzas on each baking tray and drizzle with a little olive oil. Bake for 10-15 minutes one after the other in an oven preheated to 220°C.
