Ingredients for 1 servings:
- 300 g sugar
- 150 g flour
- 6 eggs
- 300 g margarine, soft
- 2 packets of vanilla sugar
- ¾ pack of baking powder
- 500 g low-fat curd cheese
- 1 packet of vanilla pudding powder
- 1 lemon(s), juice

simple and quick cheesecake
For the base, mix together 150g flour, 150g sugar, 150g margarine, 3 eggs, 2 packets of vanilla sugar, and 3/4 packet of baking powder and pour into a greased springform pan (26cm). For the topping, mix together 150g sugar, 150g margarine, 500g quark, 1 packet of vanilla pudding, 3 eggs, and the juice of one lemon and pour onto the base of the springform pan. Bake at 180°C for approx. 55 minutes. Use a skewer to check that the cake is done and add a few more minutes of baking time if necessary. After baking, let the cake rest in the oven for a few minutes. Tips: Sprinkle with powdered sugar to taste or place canned mandarins or something similar on the base before adding the topping. Note: This is a cheesecake in which a sponge cake is first placed in the bottom of the baking pan, and the quark filling is spread on top. During baking, the quark filling sinks to the bottom and the sponge cake rises to the top; this happens automatically after about 15 minutes.
