Ingredients for 1 servings:
- 200 g wheat flour, type 550
- 100 g wheat flour, type 1050
- 100 g wheat bran
- 75 g cereal flakes (5-grain flakes)
- 75 g sourdough (wheat)
- 4 g yeast, fresh
- 12 g salt
- 10 g maple syrup
- 25 g sunflower seeds
- 15 g sesame seeds
- 170 g water, lukewarm
- 200 g boiling water
Instructions
Working time approx. 20 minutes; Rest time approx. 2 hours; Cooking/baking time approx. 1 hour; Total time approx. 3 hours 20 minutes
with wheat bran and sesame
Pour boiling water over the 5-grain flakes and let them swell until the mixture is just lukewarm (approx. 30 minutes). Add the remaining ingredients and knead thoroughly, ideally using a food processor. Cover and let rest for 1 hour at room temperature. Then shape into an oblong loaf and let rest again in a well-floured proving basket until the dough completely fills the pan and slightly overhangs the edge (approx. 30 minutes). During this time, preheat the oven to 250°C (top/bottom heat) using a heatproof bowl of water. Carefully turn the loaf out onto a baking sheet lined with baking paper and bake on the second rack from the bottom for 20 minutes. Then reduce the temperature to 180°C and bake for another 40 minutes. The bread is ready when it sounds hollow when tapped on the bottom.
