Ingredients for 4 servings:

  • 3 turnips
  • 1 bunch of radishes
  • 2 tbsp olive oil
  • 3 tbsp oil, neutral (sunflower oil, rapeseed oil…)
  • 2 tbsp white wine vinegar
  • 2 tbsp red wine vinegar
  • Salt
  • Black pepper, coarsely ground
  • Sugar
  • e.g. chives (frozen or fresh)

Peel the turnips and slice them thinly, or slice them very thinly with a knife. Slice or slice the radishes thinly. Place the turnip slices in a bowl, season with salt, and let them stand for a few minutes. Drain the water and arrange the turnips, as desired, either on individual plates or on a larger platter like a carpaccio. Mix the two types of vinegar with the sugar and, if desired, salt until the spices are completely dissolved. Then stir in the oil to create an emulsion. Taste again and adjust the seasoning if necessary. Drizzle half of the dressing over the turnips. Then scatter the sliced ​​radishes over the top. Drizzle with the rest of the vinaigrette. Sprinkle with chives and grind black pepper. Tastes great with grilled or pan-fried meat, making it a super low-carb dish.
