Ingredients
 

Tuna tartare

  • 250 g Tuna sushi quality
  • 0,333333 Cucumber
  • 1 Shallot
  • 0,5 Lime fruit juice
  • 2 tbsp Olive oil
  • 1 pinch Salt and pepper
  • 100 g Trout caviar

Salmon tartar

  • 250 g Salmon fillet sushi quality
  • 1 Ripe avocado
  • 0,5 bunch Chives
  • 0,5 Lemon fruit juice
  • 1 tbsp Olive oil
  • 1 pinch Salt and pepper
  • 1 tbsp Lemon zest

salad

  • 0,5 Radicchio
  • 150 g Lamb's lettuce
  • 0,5 Frize salad
  • 150 g Iceberg lettuce
  • 7 Radish

dressing

  • 2 tbsp Lime oil
  • 1 tbsp Olive oil
  • 1 tbsp Apple Cider Vinegar
  • 1 tbsp Cream
  • 1 tsp Honey
  • 1 pinch Salt and pepper

Instructions
 

Tuna tartare

  • Rinse the tuna under cold water and pat dry. Finely dice the tuna and place in a bowl. Peel and finely dice the shallot and add to the tuna. Season to taste with lime juice, salt and pepper. Refrigerate.
  • Before serving, wash the cucumber, cut in half, remove the seeds if necessary and also dice very finely. Add to the tuna and, if necessary, season again with lime juice, salt & pepper.
  • Arrange on the plate and garnish with the red trout caviar.

Laughing tartare

  • Rinse the salmon under cold water and pat dry. Finely dice the salmon and place in a bowl. Wash the chives, pat dry and cut into very fine rings and add to the salmon. Season with lemon juice, salt and pepper. Refrigerate.
  • Before serving, peel the avocado, cut in half, remove the core and also dice very finely. Add to the salmon and, if necessary, season again with lime juice, salt & pepper.
  • Arrange on the plate and peel the zest off the lemon and decorate with it.

salad

  • Wash all types of lettuce and cut or pluck into bite-sized pieces. Wash the radishes and cut into sticks. Mix everything in a large bowl.

dressing

  • Mix all ingredients except the cream in the mixer and season to taste. Finally add the cream and mix again.
  • Pour the dressing over the salad just before serving and mix well.
