Two kinds of stuffed baked potatoes

Ingredients for 2 servings:

  • 4 medium-sized potatoes, floury
  • 4 tomatoes, dried
  • 4 tbsp Miracle Whip
  • 1 tsp oregano
  • 1 tsp chives
  • 1 tsp parsley
  • 20 g cheese, grated Gouda
  • salt and pepper

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

vegetarian

Wash and boil the potatoes. Pour hot water over the sun-dried tomatoes (if not canned in oil), soak briefly, and then dice. Halve the potatoes lengthwise and scoop out the insides with a spoon. Mix the insides of the potatoes with Miracle Whip, season with salt and pepper. Mix half of the mixture with the oregano and tomatoes, and the other half with the chives and parsley. Place the fillings into each potato, sprinkle with Gouda cheese, and bake for about 10 minutes at 180°C. Delicious as a main course or as a side dish to grilled food!
