  • 500 g elderberries
  • 100 g sugar
  • 1 tonka bean(s)
  • 1 pinch of salt
  • 100 g gelling sugar 3:1

Carefully separate the elderberries from the stems, discarding any unripe fruits. Mix them with the sugar in a saucepan and let stand overnight. The fruits will then absorb water. The next day, finely grate a tonka bean and add it to the elderberries along with the salt. Bring everything to a rolling boil. Add the gelling sugar and bring back to a boil. Immediately pour into twist-off jars and seal them. Let cool upside down. This compote is ideal as a pancake filling, for desserts, and for quark dishes. Note: When processing elderberries, always ensure that all unripe berries are discarded and the stems are carefully removed. Ripe berries are jet black and shiny. Unripe berries, the umbel stems, and the seeds contain sambunigrin, which can cause nausea and diarrhea. This ingredient becomes harmless when heated to at least 80 degrees Celsius.
