Tyrolean dumpling soup

Ingredients for 4 servings:

  • 250 g bread roll(s), stale, in thin slices (dumpling bread
  • 50 g bacon, streaky, Tyrolean
  • 50 g sausage (mountain sausage or chimney sausage)
  • 125 ml milk
  • 2 eggs
  • Salt
  • nutmeg
  • 1 tbsp parsley, finely chopped
  • 80 g flour
  • 1 ½ liters of beef broth
  • Chives, chopped for sprinkling

Combine the dumpling bread with finely diced bacon and finely chopped mountaineer’s sausage. Whisk together the milk and eggs, season with salt and nutmeg, add the parsley, and pour this mixture over the dumpling bread. Let it sit for 15 minutes, then stir in the flour. With wet hands, form small dumplings and let them simmer for 10 to 15 minutes in lightly simmering salted water. Place the dumplings in a preheated soup bowl, pour over the hot beef broth, and serve sprinkled with finely chopped chives.
