Tyrolean dumplings

Ingredients for 4 servings:

  • 500 g bread roll(s), diced
  • 400 g bacon
  • 100 g sausage (mountaineer’s sausage)
  • 2 small onions
  • 4 m.-sized eggs
  • 250 ml milk
  • 2 tbsp parsley
  • some flour
  • salt and pepper
  • oil

Instructions

Working time approx. 30 minutes; Rest time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 50 minutes

fried on salad or delicious as a soup garnish

For the dumplings, finely dice the onion, bacon, and sausage and fry in a little fat. Whisk the eggs with milk, season with salt, and pour over the bread cubes. Add the bacon and onion mixture and season with parsley. Sprinkle with flour and let rest for 10 minutes. With wet hands, form the mixture into dumplings. Bring a large pot of salted water to a boil and add the dumplings. Simmer gently for about 10 minutes, until they rise to the surface. Remove the dumplings and serve. Delicious on a salad with fried bacon, or smaller dumplings as a soup garnish.
