Tzatziki

Ingredients for 4 servings:

  • 250 g quark, 40%
  • 250 g natural crème fraîche
  • 250 g sour cream
  • 1 pack of dill, frozen
  • 5 g thyme, dried
  • 4 cloves garlic
  • 1 large cucumber(s)
  • some salt and pepper
  • some cream

Working time approx. 15 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 15 minutes

Thyme was the tip of a Greek colleague

Mix the drained quark, sour cream, and crème fraîche. Peel the cucumber, halve it lengthwise, and remove the seeds. Grate coarsely or finely. Then discard the cucumber water and add it to the mixture. Add the crushed garlic cloves, dill, salt, and pepper. Roughly crush the thyme in the palm of your hand and stir in. A little cream makes the tzatziki smooth. I personally add a little more than 5 g of thyme. The cucumber will continue to release some water. Let it sit. Tip: Sauté the flatbread, coleslaw, some tomato, onion, and shredded meat with gyro seasoning and serve with tzatziki. This makes a great main course.
