Seasonal salad with caramelized pears and Roquefort

Ingredients for 4 servings:

  • 300 g seasonal lettuce (e.g., walnuts, oak leaf, endive)
  • 200 g cheese (Roquefort), cut into small cubes
  • 2 pears, sliced ​​and pitted
  • 2 tbsp butter
  • 1 tbsp brown sugar
  • ½ tsp black pepper, coarsely ground
  • 4 tbsp cream (half and half)
  • Balsamic vinegar

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Arrange the salad on four plates and arrange the diced Roquefort cheese on top. Melt the butter in a pan over medium heat and toast the brown sugar and black pepper for about a minute. Add the pear slices to the pan and fry for about two minutes on each side, until they are nicely caramelized and golden brown. Then deglaze with a little balsamic vinegar. Stir in the single cream. Garnish the salad with the caramelized pear slices. Finally, pour the still-warm cooking liquid over the salad.
