Ingredients for 4 servings:
- 150 g flour, preferably type 00
- 300 ml milk
- 2 eggs
- 1 pinch of salt
- 1 tsp sugar
- 20 g butter, melted
- 300 g minced pork
- Margarine, for frying
- 1 egg(s)
Instructions
Working time approx. 20 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 15 minutes; Total time approx. 1 hour 35 minutes
Prepare the crepe batter as usual from the first ingredients. Adding melted butter makes the batter fluffier. Let the batter rest for an hour. Then, in a nonstick pan (preferably with a nonstick coating), bake four crepes. Cut them in half to form eight crescents. Spread each one thinly with minced pork. Then fold the two points of the crescent to the center of the arc, press down lightly, and fold the whole thing together along the center line to form a triangle – as shown in the photo. Dip the resulting eight triangles in beaten egg and fry them all together in margarine on both sides over low heat in the pan for 7-8 minutes. Tip: You can also spread the blini with a different filling. It’s important that there are no large pieces. A rich homemade chicken or meat broth is recommended as a side dish, served in a cup.
