Ingredients for 4 servings:
- 500 g herring fillet(s)
- 2 onions
- dill
- oil
- 3 tbsp breadcrumbs
- salt and pepper
- 50 ml oil
- 2 tbsp mustard
- 30 g sugar
- 2 tbsp vinegar

Finely chop the onions, fry them in a pan, and arrange them in a greased baking dish. Season the herring fillets with salt and pepper on the inside. Sprinkle the washed and finely chopped dill on top. The amount of dill can be adjusted to your liking. Roll the fillets into small rolls, skin-side out, and arrange them on top of the onions in the baking dish. Mix the oil, mustard, salt, sugar, and vinegar into a smooth sauce and pour over the fillets. Sprinkle the fillets with breadcrumbs and bake in a preheated oven at 200°C for about 25 minutes. Potatoes can be served with the fish.
