Ukrainian Style Eggplant Spread

- 1 Pc. Eggplant fresh
- 1 Pc. Paprika
- 1 Pc. Tomato
- 1 Pc. Onion
- 1 Pc. Clove of garlic
- Parsley
- Salt
- Pepper
- Lemon juice
- 1 tbsp Olive oil
- Loaf
- Wash vegetables thoroughly. Preheat the oven to 240 ° C. Bake the whole eggplant in the oven for about 10 minutes. Add paprika and bake for another 10 minutes. Score the tomato crosswise, scald with boiling water for about 30 seconds, then rinse in cold water and peel it. Let the vegetables cool down. In the meantime, cut the garlic, onion and herbs – the finer the better.
- Carefully cut the eggplant in half and remove the pulp with a spoon. Peel off the paprika skin with a knife. Cut the aubergine, tomato and bell pepper into 0.5 cm cubes, mix in the remaining ingredients and season with lemon juice, salt and pepper. Serve eggplant spread with toasted bread.
