Ultimate Burger Bun

The perfect ultimate burger bun recipe with a picture and simple step-by-step instructions.

  • 500 g Flour type 550 (attention: not 405!)
  • 200 ml Water, lukewarm
  • 50 ml Milk, lukewarm
  • 1 cube Fresh yeast (42 g)
  • 30 g Raw sugar
  • 80 g Butter, warm
  • 8 g Salt
  • 1 Egg
  • 30 ml Condensed milk
  • Bright sesame seeds for sprinkling
  1. The yeast is dissolved in the warm milk. Put the flour in a food processor with a kneading insert and knead the yeast milk and all other dough ingredients until smooth while stirring slowly. Let the dough rise in the bowl in the steamer in the “Proofing” program for one hour.
  2. The risen dough is now divided into 12 balls, which are first rolled with your hands and then pressed flat. Spread evenly on a perforated baking sheet. Important: The bread dough pieces should be the same size as possible, the diameter after pressing flat should be approx. 9 cm. Let the finished dough rest for another hour – this way they will rise evenly and become nice and loose.
  3. At the end of the walking time, whisk the egg with the condensed milk and spread a thin layer on the rolls. This ensures an evenly golden brown surface. Sprinkle some sesame seeds on the wet surface.
  4. Bake until golden brown in the steamer: “Interval steam” program // 200 ° C // 15 min.
