Unique Chicken Skewers
The perfect unique chicken skewers recipe with a picture and simple step-by-step instructions.
- 50 g Pine nuts
- 1 Clove of garlic
- 50 g Grated Parmesan
- 200 g Dried tomatoes in oil
- 500 g Chicken breast
- 2 tbsp Chopped parsley
- Olive oil
- Roast the pine nuts in a non-stick pan over medium heat for approx. 5 minutes, stirring several times so that they don’t burn. Then put it aside for a moment.
- Press the garlic clove. Sieve the sun-dried tomatoes and collect all the oil. Measure this, you should have 175 ml, if not just add olive oil.
- In a food processor, mix the garlic, pine nuts, tomatoes, Parmesan and oil together to form a nice paste. Then put them in a large bowl.
- Cut the meat into even pieces and place in the bowl with the paste. Mix everything well with your hands (then wash your hands very thoroughly or use gloves). Cover the bowl with cling film and place in the refrigerator for at least 1 hour.
- When the meat is well marinated, preheat the oven to the high grill function. (Of course you can also do it on the normal grill, but I’ve always done it in the oven).
- Place the chicken pieces on the wooden skewers (rinse the wooden skewers with water beforehand and dry them briefly so they do not burn in the oven).
- Bake in the oven for 5 minutes, then turn the skewers and bake for another 5 minutes.
- Take out the skewers and place them on a serving platter, sprinkle with the chopped parsley. YUMMI
