Chicken – Plums – Skewers

Ingredients
 

  • 500 g Chicken breast fillet
  • 1 tbsp Honey
  • 6 tbsp Sherry medium
  • 3 Garlic cloves
  • 0,5 tsp Cayenne pepper
  • Salt
  • 200 g Prunes
  • 100 g Bacon
  • 1 bunch Spring onions
  • 12 Long Wooden skewers
  • Oil

Instructions
 

  • Wash the meat with cold water, pat dry and cut into 3cm cubes.
  • Mix the sherry, honey, salt and cayenne pepper in a bowl.
  • Press the garlic.
  • Add the chicken, turn in the marinade and cover and chill.
  • Cut the strips of bacon in half crosswise and wrap each plum with it.
  • Wash the spring onions and cut about 3cm long pieces from the white and light green part.
  • Oil the wooden skewers.
  • Remove the meat from the marinade and dab with paper towel (save the marinade)
  • Put 3 meat cubes, 2 bacon plums and 2 spring onion pieces alternately on the skewers.
  • Heat some oil in a pan and fry the skewers in portions on each side.
  • After turning each, drizzle with a little sherry marinade,
  • Arrange cool on a platter.
