exotic, fruity, simply good
Thaw the mango pieces or cut fresh ones into pieces. Hollow out the passion fruit and add to the mango pieces. Peel the peaches, chop them up, and add them to the mangoes. Blend everything finely in a tall measuring jug. Weigh the mixture and the appropriate amount of gelling sugar. Place the fruit mixture, gelling sugar, and citric acid in a saucepan and bring to a boil while stirring. Add the lemon juice. When the mixture starts to bubble, continue to boil for 3-4 minutes. Immediately pour into jars, turn upside down for about 5 minutes, then turn the jars upside down and let cool. Makes 1 large and 1 smaller jar. It is important to weigh the pureed mixture, as the weight strangely decreases after blending.
