Use leftover vegetables – this is how you make broth from them
When cooking, there are often leftovers. Instead of throwing them in the trash, you can also use them to make a delicious broth.
- First, put all the leftover vegetables in a saucepan. Then fill the pot with water so that the vegetables are completely covered.
- Depending on your taste, you can now add spices such as parsley.
- Cook the vegetables with the lid closed. Then, as soon as it boils, turn the stove down to the lowest setting and let it simmer for about half an hour.
- Now put a strainer in your sieve and then pour the broth through the sieve so that it is filtered.
- Then you can season the collected liquid with salt and pepper and fill the finished broth into sealable glasses after a short cooling time. It keeps for a few days in the refrigerator.
Make spice paste from vegetable leftovers yourself – that’s how it works
You can also easily prepare a delicious spice paste from the leftover vegetables. For this, you need 80 grams of salt and 1 tablespoon of olive oil for about 500 grams of vegetables.
- First, wash your vegetables and cut them into smaller pieces.
- Now put the leftovers in a food processor or blender. Blend it until it becomes a paste.
- Then add the salt and olive oil. You can add other spices and herbs of your choice if you like.
- Then mix the porridge well again so that all the ingredients are mixed together.
- Then fill the finished paste into sealable jars and keep them in the fridge. It will keep here for 3 to 4 days. You can use vegetable paste for all dishes.
