Use of leftovers - bear syrup

  • 1 kg Mixed berries (leftovers)
  • 1 liter Water boiling
  • 500 g Raw cane sugar
  • 1 bag Citric acid
  • 1 pinch Baking soda
  • 1 Tonks Bean
  • 1 packet Preserving sugar (strawberry jam)

Instructions
 

Use of leftovers - bear syrup

  • Select the remaining mixed berries of: strawberries, gooseberries red & green, blackberries, blueberries, raspberries, red & black currants and mulberries and cut in half if necessary. Put everything together in a saucepan and pour boiling water over them.
  • Put the lid on it and let it steep for about 20 to 30 minutes. Then the whole thing is passed through a sieve and the juice is collected in another saucepan. There you add the raw cane sugar, citric acid, baking soda, tonka bean and the preserving sugar.
  • Stir once and bring the whole thing to a boil while stirring. Please skim off foam that arises from it. Let the whole fizzy for about 2 minutes and then pour into one or more bottles, let cool. I got 1.7 liters out of it. This leftover bear syrup can be used in many ways.
  • * Info: Soda & citric acid, both serve to prevent the whole thing from crystallizing.
