Ingredients for 2 servings:

  • 100 g butter, soft
  • 100 g sugar
  • 100 g flour, type 405
  • 2 eggs, size L
  • 1 tsp baking powder
  • 1 tsp vanilla extract, alternatively butter vanilla flavor
  • 1 tsp vanilla, ground
  • ¼ tsp cinnamon, ground, high-quality
  • some milk

Preheat the waffle iron. No greasing is necessary, as the batter contains enough fat. You’ll need a heart-shaped waffle iron or Brussels waffle iron, not a special cinnamon waffle iron, as these aren’t Christmas cookies. Mix the butter, sugar, eggs, and spices well, preferably with a hand mixer. Briefly stir in the flour and baking powder, adding a little milk if necessary, and mix well. The batter should be neither too thick nor too runny and should easily pour off a spoon. Bake the batter in the waffle iron in batches according to the instructions. The waffles are delicious hot or cold. Note: Cinnamon has a very intense flavor. If you want the waffles to taste balanced—vanilla with a subtle hint of cinnamon—please follow the instructions. The waffles will keep in an airtight container for about 2 days.
