Ingredients
 

  • 4 Rectangular frozen puff pastry slices
  • 2 Egg yolk
  • 90 g Sugar
  • 1 packet Vanilla sugar
  • 20 g Food starch
  • 500 ml Milk
  • 1 pinch Salt
  • 8 leaf Gelatin
  • 125 g Cream
  • 3 tbsp Powdered sugar

Instructions
 

  • Spread out the puff pastry sheets and let them thaw for 15 minutes. Mix the egg yolks with sugar, vanilla sugar, starch and about 100 ml milk. Bring the rest of the milk to the boil with salt. Stir in the starch mix and bring to the boil while stirring. Let the pudding cool a little.
  • Preheat the oven to 220 degrees (fan oven 200 degrees). Place the dough on top of each other, roll out on flour (20x20) and cut lengthways into 2 strips. Prick with a fork and bake for about 15 minutes, cool. Soak gelatin in water. Whip the cream. Squeeze out the gelatine and dissolve in the warm pudding. Chill briefly.
  • Fold the cream into the pudding. Spread the pudding on the dough strip. Cover with the remaining strips of dough, press down. Cover and chill for about 1 hour. Divide into 8 pieces and dust with powdered sugar.
