Ingredients for 4 servings:
- 4 m.-sized eggs
- 2 packets of vanilla sugar (Bourbon vanilla)
- 2 tbsp flour
- 4 figs, fresh
- 60 ml port wine
- 40 g butter
- 1 tbsp sugar
- 1 tsp cinnamon
Instructions
Working time approx. 25 minutes; Total time approx. 25 minutes
Separate the eggs. Beat the egg whites until stiff, gradually adding the vanilla sugar. Combine the egg yolks with the flour and fold into the beaten egg whites. Wash the figs, removing the stems. Cut the fruit into eighths. Drizzle with port wine and let stand. Gently heat 10g of butter in a non-stick pan. Using the batter, make 12 small pancakes, one after the other, using the remaining butter. Mix the sugar and cinnamon and sprinkle over the pancakes. Arrange on plates with the figs and serve.
