Vanilla melon salad with quark

Ingredients for 4 servings:

  • 1 melon(s) (cantaloupe or honey)
  • 1 vanilla pod(s), or 2 packets of Bourbon vanilla sugar or homemade vanilla sugar
  • 1 lemon(s), untreated
  • 3 tbsp liquid honey
  • 250 g quark

Instructions

Halve the melon, remove the seeds, cut the flesh from the rind, and dice it. Grate the lemon zest and juice the fruit. Scrape the pulp from the vanilla pod. Mix the melon cubes, vanilla pulp (or vanilla sugar), half the lemon zest, 2 tablespoons of lemon juice, and the honey. Mix the quark with 1 tablespoon of honey, 1 tablespoon of lemon juice, and the remaining lemon zest. Serve the melon salad with the quark. Serve with cookies, if desired. Note: To make homemade vanilla sugar, put 400g of sugar and the pulp of 2 scraped vanilla pods into a screw-top jar, along with the scraped vanilla pods. Close tightly and let it steep for 4 days until the aroma has spread. It will keep for a long time if tightly closed. The sugar may harden a little; if so, simply shake the jar.
