Ingredients for 1 servings:

  • 1 vanilla pod(s)
  • 3 eggs
  • 150 g sugar
  • 100 ml liqueur (vanilla)
  • 6 tbsp vegetable oil, neutral
  • 150 g natural yogurt
  • ½ lemon(s), untreated, grated zest
  • 180 g flour
  • ½ tsp baking powder

Preheat the oven to 200°C. Halve the vanilla pod lengthwise and scrape out the seeds with a small spoon. Beat the eggs and sugar until frothy. Stir in the liqueur, oil, yogurt, lemon zest, and vanilla seeds. Sift the flour and baking powder into the egg mixture and fold in until the batter is moist and lump-free. Fill the wells of the pan two-thirds full with batter. Bake the muffins for 15-20 minutes.
