Ingredients for 4 servings:

  • 1 orange(s) (juice and grated peel)
  • 3 orange(s) , (juice)
  • 2 vanilla pods (Bourbon)
  • 2 star anise
  • 1 tsp honey (acacia honey)
  • salt and pepper
  • 1 onion(s), finely diced
  • 2 red bell peppers, cut into strips
  • 2 yellow bell peppers, cut into strips
  • 1 tbsp olive oil

Instructions

Bring the orange zest and juice to a boil with the star anise, the pulp, and the scraped vanilla pods, then reduce by about a third. Season with 1 teaspoon of acacia honey, salt, and pepper to taste. Meanwhile, sauté the diced onion and the sliced ​​bell pepper (it tastes even better if you peel the peppers first) in olive oil. Deglaze with the strained, reduced orange juice and season to taste. This dish pairs particularly well with grilled seafood, grilled fish, and grilled meat.
