Vanilla soy rice pudding with apple and cinnamon puree

Ingredients for 2 servings:

  • 1 liter soy milk (soy drink), vanilla
  • 1 pinch of salt
  • 100 g rice pudding
  • 20 g vanilla sugar
  • 40 g sugar
  • 500 g apples
  • 1 lemon(s), the juice
  • ½ tsp cinnamon powder
  • 50 ml apple juice

Pour the soy milk into a saucepan and bring to a boil with a pinch of salt. Briefly rinse the rice pudding in cold water in a sieve, drain well, and stir into the hot soy milk. Leave everything uncovered over low heat for about 35 minutes. Stir frequently as it burns easily. Sweeten to taste with vanilla sugar if desired; since the soy milk is sweet anyway, you can omit the sugar if necessary. For the puree, peel, quarter, core, and roughly dice the apples. Squeeze the lemon, add the juice and apple juice to the apples, and bring to a boil with the sugar. Simmer gently over low heat for about 10 minutes, then puree. Season with cinnamon and serve with the rice pudding.
