Vareniki with strawberries

Ingredients for 4 servings:

  • 500 g flour
  • 2 eggs
  • ½ tsp salt
  • some water
  • 1 kg strawberries
  • some sour cream
  • Sugar, to taste
  • possibly butter, melted

Instructions

Working time approx. 1 hour 10 minutes; Total time approx. 1 hour 10 minutes

Mix flour, eggs, and salt with a little water to form a firm, smooth dough. It should be easy to knead and roll out. I always do this with my hands, as I have a better feel for the dough’s texture. Let it rest for 30 minutes. Peel, wash, and dice the strawberries. Roll the dough into a sausage shape, cut off small pieces, and roll them out into flat discs. Add about a teaspoon of strawberries and sprinkle with sugar (this is a matter of taste and depends entirely on the sweetness of the strawberries). Fold the sides over and press down firmly. Cook in boiling, salted water for about 5 minutes, stirring occasionally to prevent the vareniki from sticking to the bottom of the pot. Remove with a slotted spoon and drizzle with melted butter, if desired. Sour cream is delicious with it. This is my mother’s recipe; I loved it as a child and still love it now!
