Ingredients for 8 servings:
- 800 g artichoke hearts, from the jar
- 2 garlic cloves, chopped
- 1 bell pepper(s), red, finely diced
- 2 tbsp dill, fresh or frozen, finely chopped
- 2 tbsp parsley, fresh or frozen, finely chopped
- 2 tbsp basil, fresh or frozen, finely chopped
- ½ lemon(s), juice
- 100 ml olive oil
- Salt and pepper, freshly ground black
Instructions
Working time approx. 20 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 20 minutes
Artichokes with garlic, herbs and paprika
Whisk together the garlic, olive oil, herbs, and lemon juice. Season the marinade with salt and freshly ground black pepper. Drain the artichokes from the jar and add them to the marinade along with the finely diced bell pepper. Marinate the artichokes in the refrigerator for a few hours. These marinated artichokes are a great addition to a Mediterranean buffet! Tip: You can also substitute frozen 8-herb mix for the marinade; I sometimes do that when I’m in a hurry!
