- 3 Pc Veal Adrio (Swiss Boiled Sausage)
- 2 tbsp Extra virgin olive oil
- 2 tbsp Salt pepper
Side dish 01 / vegetables
- 2 Pc Graffiti eggplant
- 1 Pc Onion
- 4 tbsp Extra virgin olive oil
- 4 tbsp Salt pepper
- 4 tbsp Oregano
- 4 tbsp Thyme
- 4 tbsp Rosemary
- 4 tbsp Cayenne pepper
- 4 tbsp Cumin
- 4 tbsp Ground ginger
- 4 cl Sherry medium dry
Side dishes 02 / mushrooms & sauce
- 330 g Mushroom (white)
- 3 tbsp Sunflower oil
- 20 g Butter
- 20 g Salt pepper
- 20 g Oregano
- 20 g Thyme
- 20 g Rosemary
- 1,5 dl White wine
Side dishes / decoration
- 4 Pc Pickled beetroot (sour)
- 0,5 yellow Hot peppers
- 1 tbsp Mustard
- 2 tbsp Mascarpone
Preparations / set-up time
- Wash and prepare the mushrooms (remove styling ends) and cut into slices. Wash and prepare graffiti eggplants (cut off the approach) and cut into small, bite-sized pieces. Peel the onion and chop it into small pieces. Preparation of the decoration: cut the beetroot (pickled) into narrow strips. Wash the peppers, remove the seeds and cut narrow strips (+ cut in half).
- Sauté the onions in the olive oil, add pieces of aubergine and fry vigorously for about 5 minutes. Season during this time. Deglaze the dish with sherry (e.g. Tio Pepe), reduce the heat a little, reduce the heat by 3/4 and add a little liquid if necessary (water, white wine, or some sherry, if you want it a little stronger at the end …. Rd Cover and let simmer gently for 10-13 minutes on a small fire. When done, empty into a bowl and cover.
- In the same pan, let the sunflower oil and butter get hot and sauté the roasted mushrooms. Season (as described above) and when the mushrooms turn brown and soft and begin to draw liquid, stir well a few times, reduce heat by 3/4, while deglazing with a strong “sip” of white wine. Allow this to boil down a little and after approx. 7 minutes put the finished dish in a ready-made bowl, or put the pan aside …
- Fry the veal adrio in the already used pan or in a new pan vigorously in the olive oil, reduce the heat and turn the Adrio around a little golden brown / crispy on the outside for about 10 minutes and, if in doubt, add 1-2 minutes because inside it has to be cooked through and have the typical consistency of fresh meat loaf or meat dumplings.
- First place the vegetables and mushrooms on the plate, then the Adrio and finally the decoration (mustard, cream cheese, etc.) If required, hot mustard can also be used, but I do not recommend this very much because of the fine tastes and nuances of the eggplant and the mushrooms are drowned out. Personally, I find the graffiti aubergine a bit milder and less bitter, which suits the dish very well ……
