Vegan apple muffins

Ingredients for 1 servings:

  • 1 cup sugar
  • 2 cups flour
  • 1 cup ground almonds (100 g)
  • 3 medium-sized apples, grated
  • 1 medium-sized apple, cut into small pieces
  • 1 cup oil
  • 1 cup lemonade (carbonated apple spritzer)
  • 1 packet of baking powder
  • some cinnamon powder
  • Paper cups

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes

A coffee cup is used as a measure. This yields 18 muffins using a regular-sized coffee cup. Using a hand mixer, combine all ingredients except the chopped apple. Finally, add the chopped apple. Pour the batter into a muffin tin lined with paper baking cups. Bake in a preheated oven at 160°C (top/bottom heat) for 30 minutes. After baking, let cool slightly, as the muffins will still be very soft and will fall apart easily, then remove from the tin.
