Vegan apple vanilla muffins

Ingredients for 1 servings:

  • 200 g flour
  • 100 g raw cane sugar
  • 1 packet of vanilla pudding powder
  • 1 tsp baking powder
  • 200 ml oat milk (oat drink)
  • 100 ml oil
  • 1 tbsp applesauce
  • 1 tbsp apple cider vinegar
  • 1 pinch of salt
  • 2 apples
  • 1 tbsp lemon juice
  • 1 tsp, heaped powdered sugar

Instructions

Working time approx. 20 minutes; Rest time approx. 15 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 1 hour

Preheat the oven to 180°C (top/bottom heat) and place the paper baking cups in a 12-hole muffin tin. Combine the flour, sugar, pudding powder, baking powder, and salt in a mixing bowl. Then add the milk, oil, applesauce, and apple cider vinegar and stir briefly until a smooth batter forms. Divide the batter between the muffins. Pour the lemon juice into a deep plate, wash and dry the apples, and cut them into thin slices. Briefly dip them in the lemon juice to prevent them from browning, then arrange them fan-shaped on top of the muffins. Bake on the middle rack for about 20-25 minutes, let them cool slightly in the tin, and sprinkle with powdered sugar.
