Vegan apricot and coconut balls

Ingredients for 1 servings:

  • 200 g apricot(s) (soft), dried
  • 3 tbsp oat flakes
  • 50 g desiccated coconut
  • 2 tbsp agave syrup
  • 1 tbsp coconut oil
  • 1 tsp cinnamon

Working time approx. 15 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 20 minutes

First, use a hand blender (or other hand-held blender) and blend the apricots into a smooth puree. Toast the oats and 25g of the coconut flakes in a dry pan until golden brown. Then add the agave syrup and coconut oil. Bring to a boil briefly and remove from the heat. Now stir in the apricots and another 20g of coconut flakes until a smooth mixture forms. Once it’s cooled, form it into small balls, preferably with moistened hands, as this makes it much easier to roll. Roll them in the remaining coconut flakes.
