Ingredients for 2 servings:
- 100 g flour
- 1 tsp cinnamon
- 100 g plant milk (plant-based drink) (soy, almond milk, etc.)
- 1 m.-sized banana(s)
- 1 m.-sized banana(s)
- 1 handful of blackberries or raspberries, currants, blueberries, etc.
- some oil

First, preheat a pan. Mix the flour and cinnamon with the milk in a bowl. It should form a thick batter. Mash the banana with a fork and mix it into the batter. Add a little oil to the hot pan and portion the batter with a tablespoon. As soon as the edges of the pancakes start to come loose, flip them. One serving yields approximately 3-4 pancakes. Meanwhile, for the sauce, mash the banana with the berries in a bowl and mix. If you like, you can gently heat the mixture in a saucepan, but the sauce also tastes delicious cold. Now serve the pancakes with the sauce. The bananas sweeten the pancakes enough, and the berry sauce replaces any sugary or unhealthy toppings. One serving with wheat flour, cinnamon, coconut milk, a medium banana, and blackberries: approximately 320 kcal
