Vegan: Beef Goulash with Vegetables

The perfect vegan: beef goulash with vegetables recipe with a picture and simple step-by-step instructions.

For the vegetable pot

  • 1 tbsp My vegetable broth *
  • 800 ml Water
  • 2 tbsp Alsan
  • 1 piece Cut onion
  • 1 tbsp Sweet paprika powder
  • Salt and pepper
  • 1 tbsp Tomato paste
  • 1 tbsp Paprika pulp
  • 2 piece Gherkins
  • 3 piece Pickled peppers
  • 0,25 piece Cut celery bulb
  • 3 piece Carrots cut
  • 1 size Potato
  • Fresh broccoli
  • Only stems used
  • 2 tbsp My vegetable broth *
  • Water for boiling
  1. Stir the vegetable stock into the water and heat it, let the soy parts simmer in it for about 8 minutes, remove with a slotted spoon and process like goulash ….. don’t throw away the cooking water … we still need it 😉
  2. 2 …. So go ahead … Heat Alsan in a pan, fry the soy parts in it, add salt, pepper and paprika and fry, then add the onions and deglaze once with a sip of the cooking water, simmer again and continue frying, do this 2-3 times until the cooking water is used up, or then simply tip the rest over …
  3. Add the tomato paste and paprika pulp and stir in, cut the cucumber and pepperoni into small pieces and stir in, fill up with a little more water or stock and then simmer for about 10 minutes.
  4. Peel the vegetables, wash them and let them simmer in the vegetable broth, I only added the broccoli stalks 3 minutes before the end … so that they stay biting ….. I used the broth to stretch for the goulash (was just 2 ladles full) but there were a lot of vitamins in it 😉
  5. Arrange everything and then you can go 😉 … that was delicious again!
