Ingredients for 2 servings:
- 2 tortillas
- 2 chorizo, vegan
- 1 avocado(s)
- 6 tbsp BBQ sauce (Buffalo sauce, recipe in my profile)
- 4 tbsp bell peppers, grilled and pickled
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes
with vegan chorizo, avocado and buffalo sauce
Chop the chorizo, dice the avocado, and slice the bell peppers. Spread the tortillas with Buffalo sauce. Arrange the chorizo, bell pepper strips, and avocado on the bottom half. Lightly season the avocado with salt and pepper and fold the tortillas closed. Fry for 3 minutes on each side. Place a pot or pan on top of the tortillas while frying to prevent them from opening. Divide each tortilla into 4 pieces and serve while still hot.
