Vegan Chocolate Orange Cake

Ingredients for 1 servings:

  • 300 g flour (organic spelt flour)
  • 175 g raw cane sugar
  • 1 packet of baking powder
  • 1 packet of vanilla sugar
  • 250 ml soy milk (soy drink)
  • 1 orange(s), zest and pulp
  • 125 ml oil, vegetable
  • 1 tbsp lemon juice, alternatively orange juice
  • 75 g dark chocolate (without milk ingredients)
  • 1 tsp coconut oil
  • 100 g dark chocolate

Instructions

Working time approx. 35 minutes; Cooking/baking time approx. 55 minutes; Total time approx. 1 hour 30 minutes

First, sift together the flour and baking powder, then mix with the raw cane sugar and vanilla sugar in a bowl. Then add the orange zest, soy milk, lemon juice, and oil. Mix well with a mixer. If the batter is too thick, add a little more soy milk. Peel and segment the orange. Chop the segments into small pieces and stir them into the batter. Finally, chop the dark chocolate and mix it into the batter. Place in a springform pan lined with baking paper. Bake in a preheated oven for approx. 55-60 minutes at 170°C (fan oven). Do the skewer test, as each oven bakes differently. Remove from the oven and let cool completely before eating. Makes 12 regular slices of cake. The cake can also be glazed with dark chocolate and a little coconut oil. Melt both in a water bath and spread over the cooled cake.
