makes about 12 cinnamon rolls
For the dough, mix the flour, dry yeast, sugar, and salt together well in a bowl. Once everything is well blended, add the plant-based milk and vegan butter/margarine. The vegan butter should be soft but not runny. Then knead the dough for 10 minutes using the dough hook of a hand mixer or a food processor. Do not add any more liquid. It takes about 4 minutes for everything to come together nicely. Cover the dough bowl with a damp cloth or plastic wrap and let the dough rise for at least 1 hour. For the filling, melt the vegan butter/margarine in a small saucepan or very briefly in the microwave. Do not heat it too hot; just warm enough to make it liquid. Add the sugar and cinnamon and stir everything well. Then let the mixture cool to firm up. Grease a baking dish approximately 25 x 35 cm. Dust the work surface and rolling pin with a little flour. Roll out the yeast dough into a rectangle approximately 30 x 42 cm. The exact measurements aren’t that important. The main thing is that it’s a rectangle and not an oval. Spread the filling evenly over the dough. Roll the dough up evenly starting from the long side. Carefully cut the roll into slices with a sharp knife, making about 12 slices (about 3 cm thick). Place the slices flat-side down in the baking dish and cover the filled baking dish with a damp cloth for about 30 minutes, while the dough pieces rise. Preheat the oven to 180°C (top/bottom heat). Spray or brush the cinnamon rolls in the baking dish with a little water—not too much. Then place them on the middle rack of the oven for about 25 minutes. When the cinnamon rolls are golden brown, remove them. Decorate the warm cinnamon rolls with frosting. To do this, melt the vegan butter/margarine and mix it with the vegan cream cheese alternative, powdered sugar, and vanilla extract until smooth. Then spread it coarsely over the cinnamon rolls. Now wait a little while until everything has solidified and enjoy.
