Vegan: Colorful Pasta Pot

The perfect vegan: colorful pasta pot recipe with a picture and simple step-by-step instructions.

  • 10 piece Broccoli florets fresh
  • 1 tbsp Vegetable broth *
  • 500 ml Filtered water
  • 500 ml **************************
  • 200 g Cooked pasta
  • 200 g **************************
  • 30 g Coconut oil
  • 1 cut Onion
  • 10 piece Mushrooms
  • 1 Red Bell pepper
  • 0,5 pole Leek
  • 1 medium sized Zucchini green
  • 1 medium sized Parsley stalk chopped

Boil broccoli

  1. Bring the broccoli florets to the boil in the vegetable stock, bring to the boil briefly and then remove with a slotted spoon and place on a plate.

Cooking pasta

  1. In the hot vegetable broth in which I cooked the broccoli, I immediately cooked the pasta, when it is done, pour it into a sieve and set it aside.

Preparing the vegetables

  1. Peel and cut the onion, wash and cut the leek, wash, core and cut the pepper, wash and cut the zucchini, cut the parsley stalks into small pieces

Stove on … pot on …

  1. 4 …. Let the coconut oil get pure and hot, first toss the onions in it, then gradually add the leek, the chamignons, the zucchini pieces, a little more vegetable salt to season, the broccoli and finally the cooked pasta give and stir everything together well … if you like, you can add garlic or chilli to it 🙂
  2. Sprinkle the chopped parsley over everything and enjoy 🙂
