Ingredients for 1 servings:

  • 200 g flour
  • 100 g sugar
  • ½ pack of baking powder
  • ½ packet of vanilla sugar
  • some vanilla flavor
  • 1 pinch of salt
  • 50 ml vegetable oil
  • 50 ml soy milk (soy drink), or rice, oat or almond milk)
  • 100 g apple or carrot
  • 100 g carrot(s)

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 50 minutes

Preheat oven to 180°C fan/convection oven. Dice the apple or grate the carrot. Mix the dry ingredients together. Add the oil, milk, and apple or carrot, and mix thoroughly. If the batter seems too dry, add a splash more milk. Place small heaps of the batter on a baking sheet lined with baking paper and bake in the oven for about 30 minutes. Let cool on the rack. Makes about 24 cookies. Tip: Refine the apple version with cinnamon; raisins also work well in the batter. I could also imagine a version with blueberries.
