Ingredients for 4 servings:
- 400 g potatoes, waxy
- Salt
- e.g. olive oil
- possibly chili oil

Working time approx. 15 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour
Quick and easy, healthy and delicious
Cut the washed potatoes crosswise, creating a fan shape, and place them on a baking sheet (be sure to line the bottom with parchment paper). Combine olive oil (or chili oil if desired) and salt in a small cup and generously coat the potatoes. Bake in a preheated oven at 200°C for about 45 minutes (the baking time depends on the size of the potatoes). I served the fan potatoes with fried garlic chips (sautéed sliced garlic with rosemary in olive oil) and black volcanic salt. You could also serve them with a light cucumber salad.
