Vegan: Made Quick Soup

The perfect vegan: made quick soup recipe with a picture and simple step-by-step instructions.

  • 3 peeled Potatoes
  • 3 peeled Carrots
  • 1 peeled Kohlrabi
  • 3 tbsp Vegetable broth *
  • 1,5 liter Filtered water
  • 1,5 liter Leek cut
  1. Chop the potatoes, carrots and kohlrabi very roughly, put them in the food processor – the “kitchen fairy” was allowed to do it for me – and pulse 3 to 5 times = chop up small.
  2. Put the whole chopped into a saucepan, add the vegetable stock and the water and bring to the boil.
  3. When it starts to cook, add the cut leek. Stir every now and then, simmer for about 5 minutes, then turn off the heat and let it steep.
  4. The whole thing can be refined with fresh parsley and only enjoyed ….. pure vitamins 😉
